National Cupcake Week
Today marks the start of National Cupcake Week – seven whole days devoted to the frosted favourite of many a baker.
I love a cupcake and though they’re not quite as popular as they were a few years ago, they’re still a regular fixture in the Zeenees kitchen. Part of the reason I love cupcakes is they’re so versatile and offer such great opportunities to really be creative and try new things.
A lot of cupcakes start with a vanilla sponge base, but some of my favourite recipes use a different sponge – like our decadent red velvet cupcake with a rich chocolatey base. Our mint choc chip and chocolate orange cupcakes also start with a decadent chocolate sponge base with the flavours added through the buttercream and decoration.
Another option for injecting some big flavours into a sponge is to have a soft centre sponge – like in our salted caramel cupcake, which has a soft salted caramel sauce in the middle of a vanilla and brown sugar sponge.
It’s in the buttercream and decorations however where the creativity really begins.
One of my favourites is our banoffee pie cupcake, which has a banana bread sponge base, a toffee buttercream and a caramel sauce topping. Or for something more classic we also make an Eton Mess cupcake – topped off with raspberry sauce, raspberry chunks and crunchy meringue pieces.
I really like experimenting with flavour combinations and cupcakes are perfect for that. They’re effectively lots of miniature cakes after all!
Cupcakes make a great addition to any party or event and in the last ten years they’ve become increasingly popular at weddings as an alternative to a conventional wedding cake. It’s a great way of making sure there’s an individual cake for everyone and a frosted tower of cupcakes makes for a great visual centrepiece.
